Contract: Full-Time
Working Pattern: Five Days Out Of Seven, Wednesday To Sunday, On A Rota Basis

About The Role

Jesmond Dene House is seeking an experienced and passionate Senior Pastry Chef to lead its pastry kitchen team. You will oversee pastry operations across the hotel, delivering exceptional quality, creativity and consistency across desserts, afternoon tea and other pastry offerings.

Working closely with the Executive Chef, you will help maintain the hotel’s high culinary standards while developing seasonal menus and supporting the growth of the pastry team.

Key Responsibilities

• Lead and manage the day-to-day pastry kitchen operation.
• Create seasonal dessert menus, afternoon tea offerings, breads, pastries and specials.
• Maintain high standards of presentation, food quality, health and safety, and food hygiene.
• Train, mentor and develop pastry chefs and junior team members.
• Manage stock control, ordering, food costs and waste reduction.
• Ensure consistency and efficiency across pastry service periods.
• Work with the Executive Chef on menu planning, costing and kitchen reporting.
• Build relationships with suppliers and source quality ingredients.
• Check deliveries for quality and consistency.

Requirements

The ideal candidate will have:

• Proven experience as a Head or Senior Pastry Chef in a busy hotel or restaurant.
• Experience leading and developing a pastry team.
• Strong skills in pastry, desserts, baking and chocolate work.
• Creativity and an interest in seasonal ingredients and menu development.
• Excellent organisation, communication and leadership skills.
• Attention to detail and a commitment to consistent quality.

Formal culinary qualifications in pastry arts are preferred but are not essential for candidates with substantial relevant experience.
