ABOUT THE ROLE
• Take responsibility for the daily operation of the kitchen and the Kitchen Brigade in the absence of the Head Chef
• Control the preparation and service of food to agreed standards
• Regularly inspect the kitchen and food preparation areas
• Maintain strict control over food issued from the kitchen
• Ensure orders are prepared according to the appropriate instructions
• Maintain portion control and take action where food wastage occurs
• Ensure correct food storage and stock rotation
• Check delivered goods against documentation for quantity and quality
• Assist in maintaining food costs within budget
• Promote communication between the kitchen and other hotel departments
• Follow safe working practices and Health & Safety requirements
• Comply with Food Hygiene Regulations
• Report building or equipment defects through hotel procedures
• Ensure accidents involving staff, guests or visitors are reported correctly
• Attend company training when required
• Carry out other reasonable duties requested by management

REQUIREMENTS
• Flexible approach
• Positive “can do” attitude
• Ability to work independently
• Experience of a busy food operation within the last 2 years
• Thorough understanding of Health & Safety regulations
• Ability to follow food hygiene policies
• Ability to build rapport quickly with Senior Management
• Positive approach to menu planning and development
• Flair and enthusiasm for working with fresh ingredients
• Experience working in a similar environment
• NVQ kitchen qualification
• HACCP and COSHH knowledge
• Knowledge of a busy working kitchen and banqueting operation
